Lentil Salad

 

This versatile lentil salad can be eaten as is or enjoyed in a gluten-free wrap.

 

Makes 4 servings.

    Ingredients

    • 1 can (19 oz, 540 ml) lentils (drained and rinsed)
    • 4 oz (125 g) low fat feta cheese, crumbled
    • 1 red bell pepper, chopped
    • 2 green onions, thinly sliced
    • 1 clove garlic, crushed 
    • 2 Tbsp (30 ml) lemon juice   
    • 1 Tbsp (15 ml) olive or canola oil
    • 1/2 tsp (2 ml) dried thyme or fresh thyme if you have it 
    • salt and pepper, to taste

    Instructions

    In large bowl, combine lentils, feta cheese, peppers, onion and garlic.

    In small bowl, whisk together lemon juice, olive oil, thyme, salt and pepper.

    Pour dressing over lentils and toss to coat.
