300g steak mince
150g black pudding
Half a red onion, very finely diced
1 egg, beaten
Salt & pepper
Brioche buns

8 rashers streaky bacon
Brown sauce

Place the beef mince in a mixing bowl and crumble in the black pudding. Add the red onion, egg, and a pinch of salt and pepper. Use your hands to mix everything together until well combined. The aim is to keep it simple, letting the quality of the mince and black pudding shine. Form the mixture into a ball, then divide it into four equal pieces and shape them into patties.

Heat a large, non-stick griddle pan over high heat and preheat your oven to its lowest setting. Slice the brioche buns and toast them lightly in the pan, then set them aside. Spread some butter and brown sauce on the toasted buns.

Add the patties to the pan and cook for 5-10 minutes on each side until fully cooked. Transfer them to a plate and place them in the oven to keep warm.

Using the same pan, cook the bacon for a couple of minutes on each side until crispy, then put them in the oven with the burgers to keep warm. Crack the eggs into the pan and cook them to your preference.

Assemble the burgers by placing the patties on the buns, adding two rashers of bacon to each, and topping with a fried egg. Place the bun lids on top and enjoy!
