Double Chocolate Waffles

These waffles will be all the rage with young and old! Crisped to perfection, with the chocolate melting inside, they will instantly disappear.

    Ingredients

    • 25 g (1/4 cup) cocoa
    • 60 ml (4 tbsp) cane sugar
    • 7.5 ml (1 1/2 tsp) baking powder
    • 1 ml (1/4 tsp) of baking soda
    • 1 ml (1/4 tsp) salt
    • 1 ml (1/4 tsp) ground cinnamon
    • 250 g (1 cup) plant-based milk substitute, to taste
    • 1 egg, beaten
    • 50 g (1/4 cup) light olive oil
    • 2.5 ml (1/2 tsp) vanilla extract
    • 60 g (1/3 cup) mini semi-sweet chocolate chips
    • 25 g (1/4 cup) finely chopped pecans
    • Oil, for cooking

    Instructions

    In a large bowl, combine the flour, cocoa, sugar, baking powder, baking soda, salt and ground cinnamon.

    Add the plant-based milk substitute, egg, oil and vanilla extract and beat with an electric mixer at maximum speed until the mixture thickens (about 1 minute).

    Stir in the chocolate chips and pecans and mix everything well with a wooden spoon.

    Let sit for 5 minutes.

    Place part of the dough on the waffle iron, previously heated and brushed with oil, spread lightly if necessary and cook, until golden brown.

    Between each batch, to obtain good crispy waffles, lightly brush the cooking surface of the waffle iron with oil.
