Homemade granola is so delicious and can be made in many variations. You might never go back to commercial granola after making this recipe. Makes 20 servings.
Variations: If you make granola regularly, play around and adjust this recipe with less sugar and honey, different nut, seed and dried fruit combinations. Hemp hearts are a great addition, as are dried apples with a couple teaspoons of cinnamon.
Ingredients
5 cups (1.25 L) gluten-free rolled oats
1 cup (225 ml) sesame seeds
1 cup (250 ml) instant powdered milk
1/2 cup (125 ml) brown sugar
2/3 cup (166 ml) canola oil
1/2 cup (125 ml) honey
1 cup (250 ml) chopped almonds
1 cup (250 ml) unsweetened, shredded coconut
1/2 cup (125 ml) flaxseeds, whole
1.5 cups (375 ml) mixture of chopped dried apricots, raisins, currants, and cranberries
Instructions

In a very large bowl, mix oats with sesame seeds, powdered milk and brown sugar.

Combine oil and honey in a glass measuring cup and warm for about one minute in the microwave.

Pour oil and honey mix over dry ingredients and toss well to combine.

Spread on 2 to 3 cookie sheets, lined with parchment paper.

Bake on low oven (275° F) about 30 minutes, stirring every 10 minutes until slightly browned.

In the last 10 minutes of baking, toss in the almonds, coconut, flaxseeds and dried fruit. Store in fridge.
