Hummus with Raw Vegetables

 

If snacking on plain raw vegetables doesn’t sound exciting, ramp them up with this delicious hummus dip!

 

Makes 6 (1/2 cup) servings.

    Hummus Ingredients

    • 19 oz (540 ml) can chickpeas, drained and rinsed 
    • 3 – 4 cloves garlic
    • 4 Tbsp (60 ml) freshly squeezed lemon juice
    • 4 Tbsp (60 ml) sesame tahini or peanut butter
    • 1/2 tsp (3 ml) salt
    • 1/3 cup (80 ml) plain Greek yogurt   
    • 1/2 tsp (3 ml) ground cumin
    • freshly ground black pepper, to taste

    Vegetables - Use Any Combination

    • Bell pepper strips, Cherry tomatoes, Cucumber sticks, Snap peas, Radishes, Carrot sticks, Celery sticks, Broccoli and cauliflower florets, Green beans (cooked and chilled)  

    Instructions

    Place first 5 ingredients in a blender or food processor and mix until smooth. Stir in yogurt, cumin, and black pepper, to taste.

    Serve with raw vegetable sticks, and gluten-free crackers if you like.
