Lemon Wafer Parfait

 

This fruit-packed, high-protein treat is perfect for breakfast or a mid-day snack.

Makes 4 portions.

    Ingredients

    • 2 cups cut up Glutino Lemon Wafers 
    • 3 cups sliced strawberries
    • 3 cups blueberries
    • 4 x (6-ounce) containers Vanilla yogurt or Greek yogurt 
    • 2 bananas, sliced
    • Zest of one lemon

    Instructions

    Wash your hands with soap and water before beginning.

    Use four drinking glasses to get exact portions/ beautiful design

    Zest a lemon, ensuring not to get any of the pith into the mix.  Toss the yogurt with the zest and reserve.

    Layer 1/4 cup strawberries, 1/4 cup blueberries, 1/3 of the yogurt container, 1/3 of the sliced banana, and two tablespoons of the cut-up Glutino lemon wafers in each glass

    Continue to build the parfait, repeating the layers until all the ingredients are used completely.

    Enjoy this as a high-protein snack or breakfast item.
