Roasted Red Pepper, Chive, and Bacon Egg Cups

 

These delicious egg cups make a great on-the-go breakfast, or try them as a quick afternoon snack.

 

Makes 6 portions.

    Ingredients

    • 1.25 cups of Glutino pretzel sticks
    • 6 slices of bacon
    • 5 eggs
    • 1/2 cup shredded sharp Cheddar cheese
    • 2 tbsp fresh chives, chopped
    • 1.5 tbsp diced roasted red peppers (liquid drained) (prepared)
    • PAM nonstick cooking spray
    • Salt and pepper to taste

    Instructions

    Wash your hands with soap and water before beginning.

    Preheat the oven to 400°F (200°C). Line a large, rimmed baking sheet with foil.

    Place slices of bacon on the prepared baking sheet.

    Place bacon in the preheated oven and bake until partially cooked, but still pliable, about 8 minutes.

    Remove the bacon from the oven and reduce the temperature to 350°F (180°C). Let it rest until cool enough to handle.

    Pulse the Glutino gluten-free pretzels in a small food processor until they are evenly crushed but not powdery.

    Spray a muffin pan with six cups with PAM cooking spray. Divide the processed pretzels into each cup. Spray the pretzels once again and press them down.

    Whisk eggs, chopped peppers and chives together in a medium bowl.

    Wrap a slice of bacon around the inside of each prepared muffin cup, just on top of the pretzels.

    Divide the cheddar cheese amongst the six muffin cups and top with beaten egg, chives and peppers.

    Bake in the oven until eggs are set, 13 to 15 minutes.
