Strawberry Oat Cake

 

This Strawberry Oat Cake is wholesome meets indulgent: a naturally sweet, cake-like breakfast that tastes like dessert but fuels your morning with feel-good ingredients.

 

Makes 4 servings.

Total time: 40 minutes

    Ingredients

    • 2 1/4 cups gluten free large flake oats
    • 1 cup milk of choice
    • 2 eggs
    • 1 cup strawberries, roughly chopped
    • 1/3 cup maple syrup
    • 1/4 cup vanilla Greek yogurt, plus more to serve as desired
    • 1 tablespoon vanilla
    • 1 tablespoon baking powder
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup strawberries, diced, plus more to serve as desired
    • 1/4 cup chocolate chips (optional)

    Instructions

    Preheat the oven to 350 F and grease an 8×8″ baking dish.

    To a blender add the oats, milk, eggs, roughly chopped strawberries, maple syrup, yogurt, vanilla, baking powder, baking soda, and salt and blend just until smooth.

    Pour into the prepared baking dish and evenly distribute the diced strawberries and chocolate chips over top. Let rest for 10 minutes. Bake for 25-30 minutes, until a toothpick inserted in the centre comes out clean. Serve with additional Greek yogurt and strawberries, as desired.
