Breakfast Muffin

Start your day with these delicious and nutritious breakfast muffins. Packed with wholesome ingredients, they offer a perfect balance of flavor and energy to keep you going all morning. Ideal for a quick breakfast or a snack on the go!

    Ingredients

    • 3 English muffins
    • 0.5 tablespoon butter plus more for buttering the English muffins
    • 3 slices Canadian bacon
    • 3 slices American cheese
    • 3 eggs

    Instructions

    Toast the English muffins and butter them to your liking.

    In a large skillet over medium heat, melt 1 tablespoon of butter. Cook the Canadian bacon slices for 1-2 minutes on each side, then set them aside on a plate.

    Place a mason jar lid or metal ring mold in the center of the pan and spray with cooking spray. Crack an egg into the ring, gently breaking up the yolk with a fork. Season with salt.

    Pour 1/4 cup of water into the pan around the ring, cover the pan, and cook for about 1 minute until the egg is fully cooked.

    Place a slice of American cheese on each English muffin half. Gently remove the ring from the egg and place the egg on top of the cheese. Repeat for the remaining eggs.

    Top each egg with a slice of Canadian bacon, then close the sandwich with the other English muffin half.
